# GHS for Flavorists: What Certified Flavorists Need to Know

According to the **January 2026 Society of Flavor Chemists (SFC) syllabus**, GHS appears under Section VII, “Flavor Organizations, Certifications and Documentation,” where candidates are expected to know the **basic scope of work** of GHS. The syllabus separately expects familiarity with **OSHA Hazard Communication (HazCom)** and **Safety Data Sheets (SDS)**. For Certified candidates generally, SFC expects a working knowledge of laboratory practices and legal/regulatory considerations, so I would prepare beyond simply knowing what the acronym means.

One terminology point: the SFC syllabus calls it the “Global Harmonization System,” but the formal UN name is the **Globally Harmonized System of Classification and Labelling of Chemicals — GHS**. It is a UN-developed framework for classifying chemical hazards and communicating those hazards consistently through labels and SDSs. GHS itself is not a single worldwide law; individual countries or jurisdictions adopt it into their own regulations. ([UNECE](https://unece.org/about-ghs?utm%5Fsource=flavorist.com))

### What I would know for the SFC Certified level

1. **Purpose of GHS.** Be able to explain that GHS standardizes how chemicals are classified for physical, health, and environmental hazards, and how those hazards are communicated. The main goal is that someone receiving a chemical can recognize its hazards and know how to handle it safely. ([UNECE](https://unece.org/about-ghs?utm%5Fsource=flavorist.com))
2. **Hazard class versus hazard category.** A *hazard class* describes the type of hazard, such as flammable liquid, acute toxicity, skin sensitization, eye damage, carcinogenicity, or aquatic toxicity. A *category* indicates the degree or severity within that class. Do not confuse GHS category numbers with HMIS/NFPA numerical ratings; they are different systems.
3. **The nine GHS pictograms.** You should recognize the symbol and general meaning of each: **flame** for flammability and related fire hazards; **flame over circle** for oxidizers; **exploding bomb** for explosives and certain self-reactive materials; **gas cylinder** for gases under pressure; **corrosion** for severe skin/eye damage and corrosivity to metals; **skull and crossbones** for severe acute toxicity; **exclamation mark** for hazards such as irritation, skin sensitization, and less-severe acute toxicity; **health-hazard silhouette** for chronic or serious hazards such as carcinogenicity, respiratory sensitization, reproductive toxicity, target-organ toxicity, and aspiration hazard; and **environment** for aquatic hazards. OSHA requires eight of the nine; the environmental pictogram is part of GHS but is not mandatory under OSHA's Hazard Communication Standard because environmental hazards are outside OSHA's jurisdiction. 4. **The basic GHS label elements.** Given a flavor raw-material label, you should be able to identify the **product identifier**, **supplier information**, **pictogram(s)**, **signal word**, **hazard statement(s)** and **precautionary statement(s)**. The two signal words are **Danger** for the more severe hazard categories and **Warning** for less severe categories. Hazard statements describe what the chemical can do; precautionary statements tell you measures to prevent or respond to exposure. ([OSHA](https://www.osha.gov/hazcom/faq?utm%5Fsource=flavorist.com))
5. **Know what an SDS is and be comfortable navigating all 16 sections.** A good Certified Flavorist should be able to find information quickly: 1 Identification; 2 Hazard identification; 3 Composition/ingredients; 4 First aid; 5 Fire-fighting; 6 Accidental release; 7 Handling/storage; 8 Exposure controls/PPE; 9 Physical/chemical properties; 10 Stability/reactivity; 11 Toxicology; 12 Ecology; 13 Disposal; 14 Transport; 15 Regulatory information; and 16 Other information/revision date. In practice, Sections **2, 3, 7, 8, 9, 10 and 14** are particularly relevant to day-to-day flavor work. ([OSHA](https://www.osha.gov/hazcom/HCS-Final-RegText?utm%5Fsource=flavorist.com))
6. **Be able to apply GHS to flavor materials rather than merely recite definitions.** For example, an alcohol-containing liquid flavor may have a flammability classification that affects storage and handling; a concentrated essential oil may have irritation, sensitization, aspiration, flammability, or environmental classifications; and concentrated acidic materials may present eye/skin corrosion hazards. The appropriate response is to consult the actual SDS and classification rather than assume that a material is safe simply because it is food-grade or FEMA GRAS. “Safe for intended food use” and “safe to handle as a concentrated workplace chemical” are two different questions.
7. **Understand mixtures.** This is especially important for flavorists. A finished flavor's GHS classification is **not simply a list of every hazard carried by every ingredient**. Mixture classification considers the hazards and concentrations of the components, available test data, concentration limits, additivity rules, bridging principles, and other GHS criteria. Consequently, diluting a hazardous aroma chemical into a flavor may change the classification of the finished mixture, but you should not assume that dilution automatically eliminates the hazard.
8. **Connect GHS with OSHA HazCom.** In the United States, the practical workplace implementation is OSHA's **Hazard Communication Standard, 29 CFR 1910.1200**. OSHA requires manufacturers/importers to classify hazards and provide labels and SDSs, while employers must make hazard information available and train exposed workers. This connection is particularly relevant because the SFC syllabus separately identifies OSHA HazCom as something flavorists should understand.
9. **Do not confuse GHS with DOT transportation rules.** GHS is the broader hazard-classification and communication framework. DOT regulates transportation of hazardous materials in the U.S. There is overlap—for example, flash point can matter to both—but a GHS label/SDS does not by itself tell you everything required for shipping. SDS Section 14 is where you normally look for transport information. This distinction is useful because SFC specifically lists **DOT, flash point and shipping considerations** separately from GHS.
10. **Understand GHS versus HMIS/NFPA.** A common exam/workplace mistake is treating them as interchangeable. GHS uses hazard classes/categories, pictograms, signal words and statements. HMIS/NFPA use their own rating conventions. OSHA permits systems such as HMIS/NFPA as supplemental workplace information, but they do not replace required GHS/HazCom information on shipped hazardous-chemical labels. One current nuance worth knowing: the **UN's current GHS is Revision 11, published in 2025**, whereas OSHA's 2024 Hazard Communication update aligns **primarily with UN GHS Revision 7**, with some later elements. So a Certified Flavorist should understand that “GHS” implementation is **jurisdiction-specific**; you should not assume every country uses exactly the same GHS revision or classifications. For the **SFC exam specifically**, flavorists may want to prioritize being able to give a clear 1–2 minute explanation of GHS, recognize all nine pictograms, interpret an actual raw-material label/SDS, know the 16 SDS sections, and explain how GHS affects the handling of flavor chemicals. The SFC syllabus says only “basic scope of work” for GHS itself, so memorizing every GHS classification threshold is probably less useful than demonstrating that you can **apply the system competently in a flavor laboratory**.
